Introducing Cabal Tequila

Seeing how much thought and passion went into Cabal Tequila‘s creation is inspiring. The bottle’s design not only reflects the qualities that both passions (raising a noble steed and a noble spirit) have in common but also pays homage to the family’s roots and heritage.

The Rancho El Portizuelo imprint on the bottom of the bottle signifies the family’s commitment to raising horses and training them for charreria competitions. Charreria is a traditional Mexican sport that involves horse riding and various events that showcase the horsemanship skills of the riders. The family’s dedication to this sport and their horses is a testament to their values of passion, love, time, care, and attention, which are also reflected in the making of Cabal tequila.

“I would like to share some details about the bottle. The bottle was designed by my business partner, me, and our family in Mexico; it is inspired by the qualities both passions have in common and what it says about the people of the culture. You need passion, love, time, care, and attention to raise a noble steed; by the same measure, you need passion, love, time, care, and attention to raise a noble spirit. We own and raise horses on our ranch, which is imprinted on the bottom of the bottle. Rancho El Portizuelo. We have anywhere from 20-30 quarter horses that we raise and train for charreria competitions. Winning gold for our spirit and our spirited horses.”  Everardo Gonzalez

Cabal is a brand of tequila that embodies the essence of Mexican heritage and culture. The word “cabal” in Spanish means precise, exact, and on point precisely what this brand stands for. Cabal represents the best version of ourselves, a trait that has been lost over time but is essential to our roots and heritage as a people. Cabal aims to do things right and be the best, just like a noble steed or a noble spirit.

Cabal’s commitment to sustainability is evident in its sourcing of recycled glass bottles and familial ties. But it doesn’t stop there. Cabal is also a single-estate organic and biodynamic tequila. With over two thousand agaves planted and six million plants in the ground, Cabal can provide a premium product from a single estate tequila.

To ensure that the agaves are of the highest quality, Cabal uses practices like crop rotation and soil analysis, providing appropriate organic fertilization per plot of land ranging from 1,100m elevation to 1,400m elevation. The agaves are then cooked in a 32-ton brick oven built in 1911. In addition, Cabal is building three more brick ovens with an actual brick-by-brick count by the same family that built the first one.

Cabal’s premium agave containing high levels of Bx is cooked for 36 hours and rests for 14 hours for a total cooking time of 50 hours. The fermentation time is around 72 hours using natural, organic yeast and open air, double the industry standard. In addition, Cabal distills with stainless steel and copper coils over a lengthier period, providing a much cleaner and smoother end product.

The high levels of natural Bx provide a better yield per kilo and result in a natural sweetness that customers love without any added additives. Cabal is a brand that embodies the essence of Mexican heritage and culture, and it’s evident in every step of their tequila-making process.

The family’s passion for their heritage and culture is imbued in every aspect of the Cabal brand, from the bottle design to the tequila-making process. It’s evident that Cabal is more than just a spirit; it’s a representation of Mexican heritage and culture, and it’s something that the family can be proud of. It’s no wonder that Cabal has won gold for its spirit and spirited horses – they are a testament to the family’s commitment to excellence in everything they do.
