Cabal’s commitment to sustainability is evident in its sourcing of recycled glass bottles and familial ties. But it doesn’t stop there. Cabal is also a single-estate organic and biodynamic tequila. With over two thousand agaves planted and six million plants in the ground, Cabal can provide a premium product from a single estate tequila.
To ensure that the agaves are of the highest quality, Cabal uses practices like crop rotation and soil analysis, providing appropriate organic fertilization per plot of land ranging from 1,100m elevation to 1,400m elevation. The agaves are then cooked in a 32-ton brick oven built in 1911. In addition, Cabal is building three more brick ovens with an actual brick-by-brick count by the same family that built the first one.
Cabal’s premium agave containing high levels of Bx is cooked for 36 hours and rests for 14 hours for a total cooking time of 50 hours. The fermentation time is around 72 hours using natural, organic yeast and open air, double the industry standard. In addition, Cabal distills with stainless steel and copper coils over a lengthier period, providing a much cleaner and smoother end product.
